Paul rebuked Peter publicly because Peter was a very visible figure, and had been teaching the public wrong doctrine. Peter's actions were affecting the entire church.
Avoid things that may be lawful but are not profitable, do not edify (1 Cor 6:12, 10:23-24). Please others, seeking for their profit, that they may be saved (1 Cor 10:33).
