Then those men, when they had seen the miracle that Jesus did, said, This is of a truth that prophet that should come into the world.

The people realized that God was at work among them in what Jesus had just done. They said, "This is the Prophet for sure, God’s Prophet right here in Galilee!" Jesus saw that in their enthusiasm, they were about to grab him and make him king, so he slipped off and went back up the mountain to be by himself.

They referred to Jesus as "the" Prophet who was to come, which meant the Messiah. See Deut 18:15-18. Some were starting to get a clue. You never know what it will take to convert someone -- after watching all those healings, for some they didn't realize who Jesus was until the miracle of the bread and fish. Never underestimate the impact that little things you do for others to show them God can have.
Yet, even as now, the perceptions of the Messiah were way off target, as we see in the next verse.
