Look at what they were hoping for -- redemption of Israel. They still didn't understand that He was sent to redeem us from sin, not oppression. Their hopes for redemption were dashed when He was crucified.
When Jesus said He would rise on the "third" day, that was customary of how they spoke. We see these 2 also counting days the same way.
Their hope was dashed, despite the accounts that indicated He had risen. As they had expected Him to be a conqueror, they probably expected His re-entry from resurrection to be grand. They must not have expected His quiet re-entry, so they discounted it as having not happened.
