Interesting that even Jesus prayed before His meals. What do you think He prayed? I suspect it was similar to what we pray - "God, thank you for this food, and we ask that it would bless us".
I imagine the disciples at this point didn't understand at all what Jesus was doing. Note this was unleavened bread, so when we take communion, we should do the same.
