During the meal, Jesus took and blessed the bread, broke it, and gave it to his disciples:

   Take, eat.
   This is my body.
Taking the cup and thanking God, he gave it to them:

"I’ll not be drinking wine from this cup again until that new day when I’ll drink with you in the kingdom of my Father."

This was during the Passover. Christ is our Passover (1 Cor 5:7). Passover celebrates freedom from Egypt, the salvation, the deliverance, of a nation. Christ replaced all the legal holidays of the Jews, for they are no longer needed.
In the same way God gave specific methods to perform the Passover (vs 19), He gave specific methods for Communion.
Bread gives life to the body (Matt 4:4, 6:11), as Christ, the brad of life, gives life to our soul (John 6:35).
We aren't given Jesus words whenver He blesses food, for God knows man, and man would probably recite those words verbatim at each meal, instead of what He really wants, the sincere prayer of thanks and blessings.
The bread was broken to commemorate the breaking of His body for us (1 Cor 11:24).
Some teach that during communion you actually are eating Christ's body (transubstantiation), or that Christ is in the bread as people eat it (consubstantiation).
- First, Jesus often used metaphors to teach spiritual truths - John 10:9 "I am the door", John 6:35 "the bread of life", John 8:12 "the light of the world.", John 15:1 "the true vine".
- Second, at this first Communion, they at the bread and drank the wine, yet Jesus was separate from the bread and wine, just as He is today.
Communion was given to the disciples. Jesus made sure Judas was gone before Communion was instantiated. Communion is only to be taken by Christians, for it is to honor and remember what Christ did for that individual.
By accepting the bread and wine, they are accepting His sacrifice for them (see John 1:12, 6:58).
